Butternut Squash and Celeriac Soup

1 head celeriac
1 butternut squash
1 sweet potato
2 potatoes
1 carrot
1 red onion
6 cloves garlic
2 vegetable stock cubes
2.5 litres water
salt and pepper

Chop all the vegetables and put in a 3 litre stock pot with lid, pour the water in, add the stock cubes, season and bring the whole lot up to a boil. Simmer with the lid on for about 40 minutes, so until all the vegetables are soft. Blitz batches in the food processor or with a handheld blender until smooth. The potatoes should thicken the soup to a smooth consistency. Season to taste.
